Salad Ingredients:

4 cups leafy greens (butter lettuce, romaine, arugula)

1/2 chopped oranges

1 avocado, diced

1/4 cup diced red onion

1/2 cup dried quinoa

1 can chickpeas

Optional Topping Ideas:

Feta cheese 

Sliced Almonds, toasted

Cucumbers, chopped

Cilantro, diced

Dressing Ingredients:

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon honey

1 teaspoon diced shallot

1 tablespoon fresh squeezed orange juice

1 teaspoon dijon mustard

1 teaspoon orange zest

Salt & Pepper to taste

Instructions

1. To make dressing, combine all ingredients in a mason jar and shake together.

2. For the salad, place all ingredients in large bowl except the almonds and avocado – I keep them separate so that leftovers are fresh.
