Ingredients:
Single Serving:
- 1 cup cooked and cooled quinoa (use bone broth instead of water)
- 1 cup diced watermelon
- ½ avocado, cubed
- ½ cup cucumber, chopped
- ¼ cup fresh mint or basil
- 1 tbsp olive oil
- Juice of 1 lime
- Sea salt to taste
- Optional: sprinkle of pumpkin seeds for crunch & magnesium
