Ingredients:

Single Serving:

  • 1 cup cooked and cooled quinoa (use bone broth instead of water)
  • 1 cup diced watermelon
  • ½ avocado, cubed
  • ½ cup cucumber, chopped
  • ¼ cup fresh mint or basil
  • 1 tbsp olive oil
  • Juice of 1 lime
  • Sea salt to taste
  • Optional: sprinkle of pumpkin seeds for crunch & magnesium
