Ingredients:

1 spaghetti squash split in half

Feta cheese (1-2 oz/half)

4 garlic cloves minced

20 cherry tomatoes

3-4 T extra virgin olive oil

Sea salt to taste

Handful of basil leaves

 

Protein Suggestions:

Blackened / Grilled shrimp, fish, or chicken

Roasted chickpeas for a vegetarian dish

Instructions

1. Preheat oven to 400 degrees.

2. Place halved spaghetti squash on parchment paper, drizzle each half with olive oil and sprinkle with sea salt,

3. Place 1-2 oz feta cheese in the middle of each halved spaghetti squash, stop with garlic, tomatoes,  and another drizzle of olive oil and sea salt.

4. Bake for 1 hour and 15 minutes.  

5. Stir together and top with basil.
